Ingredients

  • 170g butter
  • 150g brown sugar
  • ½ cup caster sugar
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 large egg plus 1 large egg yolk
  • 1¾ cups all purpose flour
  • ½ tsp baking soda
  • 1 cup chocolate chips

Prep

Preheat oven to 190C.

Melt the 130g butter in a cast iron pan. Cook until the butter is dark golden brown. Add the remaining 40g of butter until melted. Take off the heat.

Whisk in the brown sugar, caster sugar, vanilla and slat until smooth. Whisk in the egg and yolk until smooth. Let it rest for 3 minutes, then rewhisk. Repeat 3 times.

Whisk the flour and baking soda together. Mix into the wet mixture. Fold in the chocolate chips.

Add the dough to the skillet. Press into an evan layer. Transfer to the oven and bake until brown, and the edges are set (~20 mins). Let it cool for 20 minutes.
